Navigating the Keto Lifestyle with Purpose and Practicality

Okay, so I’m the Queen of the Dad Jokes (Tara). Moreover, I am the daughter (or the granddaughter…maybe great-granddaughter…?) of the King of the Dad Jokes. What I’m trying to say here is that Holley and I come from a long line of quick wit. Yes, sometimes it may be corny and contrived, but it is more often clever and deep. In this case, I feel it’s a bit of both ends of the spectrum. I say that because so many people are overwhelmed by the thought of “Keto” foods that they quit before they ever give it a shot. Yet, if you take a moment to truly look at “Keto” foods, I’d venture to say you already have a majority of them in your personal stores. So, you “CAN-try” to fill your “Pantry” with very little effort.

I know. The rhyme scheme doesn’t work; but the spelling does. Just give me this one. 

One of the most basic questions people beginning a ketogenic lifestyle ask is, “Where do I begin?” We are working to give you straightforward and easily accessible answers to that question with grocery and getting started guides. In the meantime, let us give you a figurative glimpse into our personal pantries…and a literal glance at part of mine. We thought we’d give you a quick run-down of our most used staples. This is by no means an exhaustive list, but these are our personal essentials.

Three things we want you to remember –  1. CHECK THE CARB COUNTS before you buy or eat. Some pickles, for instance, have an insane amount of hidden sugar, but many have none. Read the labels or use a trusted nutritional information source to be sure you don’t get tricked into unnecessary carbs. 2. HEALTHY FAT IS YOUR FRIEND! Don’t fall prey to the mindset that “low fat” means healthy. “Low-fat” foods are often riddled with unhealthy, unnecessary sugars or other fillers and contain more carbs than their full fat counterparts. 3. JUST BECAUSE A FOOD ISN’T ON THIS LIST DOESN’T MEAN IT’S NOT “KETO!” Make label reading a part of your typical habits and stay within your carb limits. Everyone is different! Let me add that, while Holley and I both strive to eat as many whole, unprocessed foods as possible (“Strict Keto”), we both have also made amends with the fact that in our lives, balance equals incorporating some processed options as well (“Dirty Keto”). YOU do what is best for YOU to achieve YOUR goals.  

Here are our “must have” recommendations.

  • Natural Sweeteners/Sugar Alternatives (we recommend Swerve brand, although there are several Erythritol, Stevia, Xylitol, Monk Fruit, Yacon Syrup, Sucralose options out there)
  • Sugar Free Chocolate Chips (Lily’s is a great brand. Bake Believe is another. Again, be sure you read the labels!) 
  • Unflavored Protein Powder
  • Unflavored Grass Fed Gelatin

  • Natural (no added sugar!) Nut Butters

Hello, I’m Holley! I’m Tara’s niece and co-conspirator for the Butter Me Bacon blog!

Let’s be honest… I have stared at the computer screen for days trying to write this bio. I can talk to you about disease processes, the pathophysiology of the heart, and pharmacology for umpteen hours. But when asked to give a brief description of myself, my brain ironically transforms into a scrambled egg. My family would likely also add that I don’t have a “brief” bone in my body.

A little about me!

I am a Christ follower, wife, Registered Nurse, and dog mom to two spunky German Shepherds, Ruby and Roxie. We enjoy being outdoors, hunting wild game, traveling, junking, and Harry Potter marathons. I am a collector of all the vintage things, but specifically quilts, recipe pie plates, Pyrex, and medical books. Like Tara, I would also consider myself an “old soul.”

My relationship with my health and food has been nothing short of a roller coaster. I never fully understood my nutritional needs, despite the issues that presented themselves early on in my life. As a young child, you could always find extra snacks tucked in my backpack for when my blood sugar would plummet suddenly at school. At the time, I just could not grasp the rhyme or reason behind the frequent drops. In high school, I ate whatever my heart desired… as most teenagers do. My struggles with hypoglycemia continued. Shocker, huh? As I transitioned to a college student, I worked as a waitress until I finished my CNA certification. My love for food continued, but my metabolism kept up. That quickly came to a screeching halt during my  practical nursing program, aka the toughest year of my life. I spent countless hours each day doing homework, studying, and snacking on anything and everything. I gained a whopping 27 pounds that year. In addition to the weight gain, I also began struggling from hand swelling/pain, increased intensity and frequency of headaches, bloating and GI distress, depression, anxiety, and an overall feeling of being “unwell.” As if that year wasn’t grueling enough, I was also diagnosed with polycystic ovarian syndrome, or PCOS, during that time. I was informed that my testosterone levels were sky high, and my progesterone level was literally zero. Yes, I mean zero. This was a TOTAL wake up call for me. My provider at the time specialized in women’s health and suggested a Paleo/AIP diet to me. Her recommendations were to lose 10% of my body weight, adapt to a paleo lifestyle, and utilize stress management techniques. I’ll spare you the details here and just say that I failed at all of those recommendations that year. I graduated nursing school at the top of my class, but also on the fast track to complete metabolic syndrome.

After a lot of research, trial and error, and pure grit, I adapted to a paleolithic style diet. It was TOUGH. This girl loves some dairy! I found myself continuing to struggle with the constant rise and fall of my blood glucose. Over the next two years, I found myself in a never-ending yo-yo of trying to stay paleo, counting calories, eating intuitively, and just simply giving up. I attempted keto once, but again failed due to my lack of education and understanding of the basic principles behind the diet. I actually prefer the word “lifestyle” when referring to keto. However, I’ll save that soapbox for another day.

Fast forward to 2020, the year that seemed to never end. My husband and I had been trying to conceive for quite some time. In fact, we had surpassed the timeframe of what is considered “infertility.” I decided it was time to be seen by my provider. If you know a nurse, you know that going to the doctor is like pulling teeth for us, comparatively speaking. I was then diagnosed with Hashimoto’s Thyroiditis, in addition to the continued low progesterone levels. This was the actual breaking point for me. I now found myself 24 years old with an autoimmune disorder, infertility, and not to mention an EXTREMELY high genetic predisposition for diabetes, hypertension, and high cholesterol. It was time to take control of my life.

Then came Keto, again, but this time with countless hours of education and research.

Three months after living a true ketogenic lifestyle, I found myself 14 pounds lighter, my thyroid medication cut in half, off anxiety medication, and essentially symptom-free. And best of all, to my surprise, I was FINALLY pregnant…On September 30th of 2020, we lost our precious baby. Nothing prepares a husband and wife for that feeling. There are no guidelines on how to physically/emotionally deal with the struggle that comes with moving forward. I gave up on Keto. I gave up on myself. I quickly gained back every ounce of weight I had lost, neglected my normal exercise routines, and found myself in a never-ending pit of despair and self-neglect.

I am happy to share with you that thanks to a whole lot of Jesus, my husband, family, and friends, I am now several months back into a ketogenic lifestyle. I am now 12 pounds lighter, no more heart palpitations, no more joint swelling/pain, less brain fog, and no more blood sugar spikes/crashes. And my most favorite improvement of all? I am once again on half the thyroid medication as I was previously.

To me, Keto isn’t some fad diet to help me lose a large sum of weight in a short time. There is truly no health benefit to weight loss if it is not sustainable and healthy. My weight loss has been slow, as is expected with low thyroid function anyway. However, I can promise you that the internal changes I have experienced are far superior to what can be seen externally. That is truly what matters. I am taking control of my health in a way that works for me. Have I reached my ultimate health goals? Not yet. Is Keto for everybody? Absolutely not. My husband eats an insane amount of carbs each day, and he is one of the healthiest, most physically fit people I know. His nutritional needs are not the same as mine by any means. Your nutritional needs are not the same as anybody else’s either!  The goal of this blog is to expand the knowledge about what nutritional ketosis and living “Keto” truly means, debunk myths and falsehoods about this way of life, give you the tools you need for success, and share some super delicious recipes along the way!

Hey, everyone! I’m Tara: Holley’s aunt and the elder of the Butter Me Bacon duo. Writing your own bio is far more difficult than I imagined it to be! No one really likes talking about herself, does she? Yet, here I am…so, here goes!

Just a few brief things to let you know “who” I am: I’m a coach’s wife, a mom of two teenagers (sports mom), a Speech-Language Pathologist, a singer, a baker, and a soul who is much older than her years on this earth. I enjoy traveling, music, cooking, trivia, learning, watching sports, and junking. God and family are the cornerstones of my heart and life. 

I have always loved food. I love the taste, obviously. More than that, though, I have always been infatuated with the preparation, the care involved in crafting a meal for loved ones. I was fortunate to spend much of my childhood in the presence of my grandmothers. I spent many summers helping my Grandma Janice pick blackberries, tend the garden, snap beans, milk cows, and feed chickens. Then I would sit in her kitchen and watch her transform those items into mouth-watering treats of jellies and soups and gravies and pies and cakes and so much more! Likewise, I spent many days with my Grandma Alma, watching her turn the most basic ingredients into straight-up love on a plate. As a pastor’s daughter and granddaughter, I watched food bring people, churches, communities together. Someone has reason to celebrate? Celebrate with food! Someone has reason to mourn? Comfort them with food. Someone is new in town? Welcome them with food. Food is the universal language of love. And as I grew into adulthood, it became my love language, not only to others, but to myself as well. 

I turned 40 at the heaviest I had ever been in my life. For those of you who haven’t joined the 40+ club yet, I can assure you that is not how you envision ringing in what is supposed to be your most “fabulous” decade. I’d been on some sort of “diet” or “healthy eating” kick since I was a teen, long before I ever needed it. I had lost control of my metabolism and self-discipline several years prior, and it had certainly caught up with me. I had many medical issues brewing. Because working in medical speech pathology provides you with a strong base of medical knowledge, I saw the writing on the wall, but I was too stubborn (more likely, scared) to go see my medical provider and be formally diagnosed. I was suffering from severe acid reflux, shakiness and rapid pulse after eating a meal, constant hunger, depression, snoring (probably sleep apnea), joint swelling and pain, blood pressure still considered normal but creeping a bit higher every time it was taken…need I go on? 

Fast forward to March 2020, the Ides of Covid. We began it like most others I know, cooking whatever comfort food we could think of out of whatever groceries we managed to successfully get in our Wal-Mart pickup order. Hello, 10 additional pounds I’d been keeping at bay! I wasn’t happy about it, but I also wasn’t doing a single thing to try to stop it. Church services were being live-streamed rather than in-person, and as a member of our church’s worship team, I now found myself on TV weekly, trying desperately not to be vain but wishing desperately I didn’t see what I saw when I watched that girl on the screen. Easter Sunday was my turning point. I decided I had to make a change, truly make a change and stick to it.

Holley and I had a long conversation about my weight struggles, my past failures, our family medical history, and anti-inflammatory diets. I knew I had to make a change for my health. All things considered, I decided Keto was the best option for me. Here I am almost a  year later, 45 pounds down and still counting, off all reflux meds, no more snoring, no joint pain, blood pressure back to my normal. And can I tell you? I have not gone to bed hungry one single time since I started this lifestyle! I cannot say the same thing for any of the other “healthy” options I’ve ever tried. 

Now that you know my story, let me tell you why I was moved to start this blog. Firstly, this is truly my lifestyle now. It is second nature, and it works well for me. I get constant questions from people asking what I’m doing and then past that, people want help. They are stuck in that same never-ending loop I was stuck in, trying to find the answer that works for them. They need help. They want help. They don’t know where to turn for help. They don’t have a Holley like I do to work through this together. Secondly, my love for food and loving people with food has not changed. It never will! I am always going to be entertaining people. I will forever be baking someone’s favorite dessert for his birthday. I will always feed you if you come into my house. It is my calling. I want to share that with everyone! From the ways I adapt dishes so that Keto and non-Keto folks alike can enjoy them to the great recipes I stumble upon or concoct myself, I want everyone to feel as satisfied and fueled by his or her food choices as I do. This lifestyle does work. It is sustainable. I can honestly say I don’t miss carbs. I want you to be able to say that too.
